Avocado Fries

I'll be honest, I saw this on Pinterest...I knew I must make them. They look delicious-I couldn't stop drooling while reading through the recipe. However, I did not have any panko on hand, so I used what I had in the fridge (Kraft Fresh Take: cheese and breadcrumb mix).

I dipped each avocado slice in egg, then shook it up in the bag with the mix. Then I followed the recipe, cooking the fries at 450 degrees-then bumping it up to broil (500 degrees) for the last 5ish minutes.
The fries were yummy, but could have used a little more salt. The avocados change flavor when baked, so don't be stingy with the seasoning :)
We enjoyed our fries with chicken salad sandwiches and soda. Yummy!
